Inspired by the Basque Country's home along the Bay of Biscay, our version is built around the sea: clams, shrimp, and mussels. But we're Basque through and through — Basque in Boise, no less — so naturally there's one ingredient we can't live without: chorizo. Paired with chicken, saffron, pimentón, and perfectly cooked rice, it all comes together in the paella our guests keep coming back for.
In this demonstration-style class, we'll walk you through the techniques behind exceptional paella — building layers of flavor, mastering the rice, and achieving that coveted crust. Along the way, we'll share the history of this emblematic Spanish dish and explain the role each ingredient plays in its distinctive character.
Plan to arrive at 5:30 PM to enjoy pintxos, sample wines, and settle in before class begins promptly at 6:00 PM.

After 20 wonderful years in business—and hosting this beloved tasting event for around 15 of them—we are giving our annual tradition a brand-new name and an even better spot on the calendar! This year, we are moving the festivities to Saturday, November 21st, 2026.

Fall for Sherry: A Taste of Spain's Most Misunderstood Wine
As the days grow shorter and the air turns crisp, there's no better time to discover the rich, complex world of sherry. Often overlooked and widely misunderstood, sherry is one of Spain's most fascinating wines, offering an incredible range of styles that pair beautifully with food.
Our special guest, Mike Sadler from Well Oiled Wine Company, will guide us and make sherry approachable and fun as we explore the distinct styles, from crisp and dry to rich and nutty. The featured wines will be from Bodegas Barbadillo, a winery established in 1827. Mike has visited Bodegas Barbadillo in Cádiz and is a passionate sherry expert. Along the way, you'll learn about the history of sherry, the unique Solera aging system, and the traditions of the Sherry Triangle in southern Spain. We'll discuss how sherry is made, what makes each style unique, and why this versatile wine deserves a place at every table.
Each sherry will be thoughtfully paired with a seasonal pintxo inspired by the flavors of fall, showcasing how food and wine can elevate one another. Expect comforting autumn ingredients, creative pairings, and plenty of opportunities to discover new favorites.

The performance begins at 5:00 PM as we build our world-famous paella right before your eyes, layering the vibrant colors of saffron and fresh ingredients into a giant canvas of flavor.
Come early to watch the culinary masterpiece take shape and enjoy our artfully crafted, beautiful pintxos. At 6:00 PM sharp, the paella is served!

Whew—it’s hot outside! Beat the heat with three refreshing chilled soups that deliver big flavor without turning on the stove or heating up the house. In this demonstration-style class, we'll explore classic Spanish cold soups that are perfect for summer entertaining, light lunches, or cooling off on a warm day. You'll learn simple techniques, flavor balancing, and presentation tips while we prepare three delicious no-cook soups.
Gazpacho Verde
A vibrant green twist on traditional gazpacho, this refreshing soup combines cucumbers, green peppers, herbs, and other fresh summer vegetables for a bright, crisp flavor and beautiful color.
Salmorejo
