SUMMER SOUPS COOKING CLASS
Whew—it’s hot outside! Beat the heat with three refreshing chilled soups that deliver big flavor without turning on the stove or heating up the house. In this demonstration-style class, we'll explore classic Spanish cold soups that are perfect for summer entertaining, light lunches, or cooling off on a warm day. You'll learn simple techniques, flavor balancing, and presentation tips while we prepare three delicious no-cook soups.
Gazpacho Verde
A vibrant green twist on traditional gazpacho, this refreshing soup combines cucumbers, green peppers, herbs, and other fresh summer vegetables for a bright, crisp flavor and beautiful color.
Salmorejo

Inspired by the Basque Country's home along the Bay of Biscay, our version is built around the sea: clams, shrimp, and mussels. But we're Basque through and through — Basque in Boise, no less — so naturally there's one ingredient we can't live without: chorizo. Paired with chicken, saffron, pimentón, and perfectly cooked rice, it all comes together in the paella our guests keep coming back for.
In this demonstration-style class, we'll walk you through the techniques behind exceptional paella — building layers of flavor, mastering the rice, and achieving that coveted crust. Along the way, we'll share the history of this emblematic Spanish dish and explain the role each ingredient plays in its distinctive character.
